Carmey Avdat is a small family winery that produces approximately 6,000 bottles per year. A family – run vineyard adjacent to the winery has numerous advantages: When the winemaker is also the grower there is an ever-present and guiding objective of producing high-quality wine throughout the process of cultivation, harvest, and bottling.
The production of wine is based on the vineyard’s two varieties: Merlot and Cabernet Sauvignon. The Merlot grapes are usually harvested in mid-August while the Cabernet is picked in the beginning of September. The grapes are taken to the winery during the early morning immediately after being harvested and are placed in the fermentation vats. The fermentation process takes place at a temperature of 25 degrees Celsius, which preserves the unique aroma of the vineyard. This is the guiding principle for all decisions we make in the
winery.
We have recently begun to produce liqueurs from the fruits in the orchard including apricots, peaches, nectarines and apples.
The produce of the vineyard is mainly sold on the farm to guests and to groups who come for excursions and wine tasting expeditions. Our wines are also sold in restaurants in the area and through our Internet site, where it can be ordered and shipped directly to clients.
